runtime: dereference symlink in gr::prefix()
* Fix gnuradio/gnuradio#4639 by dereferencing symlink in gr::prefix().

* Fix gnuradio/gnuradio#4639 with update per suggestion by ryanvolz.
Using std::filesystem::canonical resolves symlinks and normalizes path.
